When a sunny day follows the fall rains in Oregon you can be sure that the mushrooms are popping up and it’s time for a day of gathering them in the forest of the coastal mountains.

The first mushroom image is an almost 3 pound King Boletus mushroom. The French call these mushrooms ‘ceps’ and the Italians ‘porcini’, but whatever you call it, I call it delicious. This mushroom starred in my Thanksgiving dressing and gravy.

The common name of the last image of mushrooms is horse mushrooms. It is the mushroom that was developed into the white grocery store mushroom. It’s more fun to pick them that buy them! (:

Leg of lamb, mashed potatoes, buttered peas with mint, cold asparagus with lemon vinaigrette, baked tomato caprese, and eggs with crème fraîche and herbs

I am enjoying a healthy breakfast every morning. I have been doing this for about six months now and am really delighted to realize the benefits of lots more energy everyday! I love it!!!

I want to share my smoothie recipe with you, most of the ingredients are organic.
1. handful of spinach
2. 2 tablespoons of coconut milk (canned & not reduced fat)
3. ½ of a small raw beet, chopped
4. 8oz. of water
5. scoop of protein powder
6. ½ cup of mixed frozen berries

Blend until smooth.

Sometimes I add to my breakfast a semi-hard boiled free-range, farm egg for a real treat. This is the best!

Most mornings we made two stops; first at a patisserie for a quick and oh soooo delicious pastry and then again for coffee.  This particular morning we sat down for a leisurely breakfast at a small, classically French restaurant.

When they served my breakfast, it was so attractively arranged and the butter pot was covered in vellum, printed with the name and address of the restaurant. I had to photograph it!

It all tasted as good as it looked and we were off to see the fine sights of Paris.
